Our View On-the-Ground

January 2025

Having developed more than 70 profitable restaurants around the world, Acurio Restaurantes’ recipe for success in targeting and engaging diners and investors is well refined.

But as the company rolls out its considerable U.S. expansion plans over the next five years, those who’ve never visited a Gastón Acurio-based business may wonder “what makes these Peruvian eateries so successful?

As this brief video tour of the company’s current U.S. sites reflects, the answer is abundantly clear: the food, the drink, and the people make for a powerful presence on any city’s dining scene.

Jarana Gets the Party Started

Our video journey starts in New Jersey, where in less than two years of existence, Acurio’s Jarana has redefined “party” from within the American Dream Mall.

Michelle Javier of ABC’s Localish Network visited with chef Jesus Delgado while tasting his unique take on blending authentic, home-cooked dishes and drinks from Peru with a vibrant, fun atmosphere. And don’t miss dessert.

In the segment, Michelle also interviewed Marisel Salazar, author of the cookbook Latin-ish, about the broader trends in Latin American tastes and flavors in the U.S.

La Mar in Miami Not Just For Dinner

Further down the Atlantic coast, YouTube personality Mike Chen stopped by Acurio’s La Mar location within the Mandarin Oriental on Biscayne Bay.

Mike, who travels the world for unique dining experiences, visited La Mar, which celebrated its 10th anniversary last March, to sample the Michelin-rated eatery’s Sunday brunch experience.

He raved about dish after dish that he tried—“such a uniquely delicious buffet”—in an experience that he said transported him back to the streets of Peru.

Tanta a Midwest Melting Pot

Turning to the Midwest, Acurio’s Tanta has served as the standard for Peruvian cuisine in Chicago for 11 years.

In addition to tailoring its menu to regional preferences and locally available ingredients, the restaurant capitalizes on well-established contacts across Acurio Restaurantes to replicate other site’s successes for its Midwestern clientele.

For example, in this clip, a special menu to pair with wines from Halleck Vineyard, a family-owned winery in California’s Sonoma County that’s worked with La Mar in San Francisco, was shared by chef Gee Cuyugan in a studio segment on WGN-TV.

The Flagship Location on San Francisco Bay

Our tantalizing video tour concludes in San Francisco, where La Mar has been serving Peruvian specialties for 16 years.

When a camera crew from ABC7 visited the restaurant located at Pier 1½ along the Embarcadero, bar manager Gina Lee whipped up a colorful array of inspired cocktails.

And charismatic executive chef Victoriano Lopez presented his locally inspired take on a Peruvian standard: Cebiche California.

The Taste of Peru Headed Your Way?

Acurio Restaurantes is currently planning to open as many as a dozen new La Mar and Jarana locales in the U.S. by 2029, with a focus on the Atlantic coast, Texas, and Southern California.

Building upon the successes captured in the videos here, each new location has the potential to emerge as the go-to spot for the best of the unique flavors of Peru in every city in which they open.
